ingredients, we take our menu-planning cues from Mother Nature.

steak, with grilled sweet onion, pico de gallo, organic black beans, melted
Sonoma jack cheese (optional but recommended) and a side of poblano chile salsa

Slow-roasted Berkshire Farms achiote
pork, pickled red onion, little gem lettuce, fiery chipotle salsa
Lamb Taco
Braised Red Hill Farms leg of lamb,
grilled jalapeños, Burmese spices, pickled cucumbers with sesame, Thai basil,
local sheep’s yogurt sauce
Veggie Taco
Corn, roasted red peppers, huitlacoche
(corn smut), nopales, black beans and queso fresco (all produced locally) in an
organic blue tortilla, with a side of pico de gallo
Taco de Pato
Marinated and grilled local duck
breast with grilled squash blossoms, green onion and mole sauce

Grilled wild mushrooms, epizote,
grilled onions, melted Sonoma jack cheese, cilantro and toasted pumpkin seeds
